Cream of Broccoli Soup Recipe

Cream of Broccoli Soup

Ingredients:

  • 2 tbsp olive oil or butter
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 4 cups fresh broccoli florets
  • 1 medium potato, peeled and diced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or full-fat milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme or oregano (optional)
  • 1 cup grated cheddar cheese (optional)
  • Freshly squeezed lemon juice from half a lemon (optional)

Instructions:

  1. Prepare all the vegetables by washing, chopping, and setting them aside.
  2. In a pan or pot, heat the olive oil or butter over medium heat. Add the water-chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
  3. Add the majority of the water-chopped broccoli (except the reserved 1 cup) and all the water-chopped potato to the pot.
  4. Pour in the vegetable or chicken broth. Add salt, pepper, and dried thyme or oregano (if using). Bring the mixture to a boil, then reduce to a simmer. Let it cook for about 10-15 minutes, or until the potatoes are tender.
  5. Transfer the contents of the pot (excluding the reserved broccoli tidbits) to the Vitamix. Secure the lid and start blending on a low speed, gradually increasing to its highest speed. Use the soup function or blend until the mixture is hot and steaming, about 5-6 minutes.
  6. Reduce the Vitamix speed to its lowest setting. Add the reserved broccoli tidbits and pulse a few times to incorporate them without pureeing.
  7. Transfer the soup back to the pot and place it on low heat. Stir in the heavy cream or milk. If you're using cheddar cheese, add it now and stir until melted.
  8. Taste and adjust the seasoning if needed. If you're using lemon juice, add it now for a touch of brightness.
  9. Pour the soup into bowls and garnish with extra cheese or fresh herbs if desired. Enjoy!
