Ingredients:
- 32 oz beef stock
- 1 large potato, peeled and diced
- 1 can (28 oz) peeled tomatoes
- 2 large yellow onions, diced
- 1 small can of green chili peppers, diced
- Salt, to taste
- Lemon pepper, to taste
- 2 tablespoons white vinegar
- 2 cups crème fraîche
Instructions:
- In a large soup pot, sauté the diced onions until translucent.
- Add the diced potato, tomatoes, and diced chili peppers to the pot. Season with salt and lemon pepper.
- Pour in the white vinegar to the pot and scrape the bottom to lift any browned bits.
- Pour in the beef stock and bring the mixture to a gentle simmer. Let it simmer for about 15-20 minutes.
- Transfer the majority of the soup to a blender and blend until smooth.
- Return the blended soup to the pot. On low heat, stir in the crème fraîche until well combined.
